Dry Rubs Add Flavor Without the Wait
There was a request in comments last time for quick and easy marinades for grilling different types of meats. While I do plan to address that specific question next time, I'd like to suggest another way to impart wonderful flavor in a short amout of time—dry rubs.
What is a dry rub? It is a combination of spices that are mixed together, then rubbed into the meat of your choice. I've used a few diferent rubs with great success, a favorite was from Costco that was already pre-mixed. One that we made last year and enjoyed many times was a rub we used on our smoked ribs - Memphis Dust from Meathead's blog (check it out for a lot of great advice on smoking and grilling).
Now, don't be dissuaded by the amount of ingredients in the rub. The recipe makes three cups, but will keep very well in a tightly sealed container for a couple of months. I made up one batch of the recipe last summer, and we did not finish it until our last time smoking ribs last summer. With most rub recipes, you will find they make more than you need for the current meal. This works out perfectly for the next time you want to grill because part of the work is already done.
The recipe for Memphis Dust is perfect on ribs, but can also be used on salmon and it's even suggested to toss with some popcorn. As is mentioned in the blog post, don't be afraid to play with seasonings and adjust to your personal taste.

Ingredients
Tom for normal grills (non-charcoal) -- they do sell little smoker boxes that you can place on the side inside the grill. Alternatively -- you can place the wood chips in a homemade aluminum pouch with little holes cut into it. Either way will add a slight smokey flavor. However, to get that nice smoke ring -- a smoker / charcoal grill is definitely the way to go.
Tom - Jeff is right about that, and if you aren't ready to jump to a smoker just yet that would be the way to go.
What you will want to do is make sure you have time to devote to the low-and-slow cooking method when it comes to ribs. I'd suggest keeping the temperature around 225-250 and depending on the amount of ribs you have, it could take about 4-5 hours. You will know they are done if when you pick them up with tongs and the meat starts to pull away from the bone. Once you get to that point, you can then add BBQ sauce (if you want) and allow to cook for another 30 minutes to get that nice carmelized look and flavor.

Do a Dry Rub First
Next rub the ribs with your favorite dry rub and place them bone side up in a roasting pan. I have found that jarred dry rubs are well balanced with sweet and spice and make for a good tasting rib. If you have a particular preference, then mix up a batch of your own personal seasonings and store it in an air tight container with the rest of your spices. You will then always have your favorite rub on hand. When the ribs are done separate them and roll them in your favorite BBQ sauce. This allows you to customize the ribs to the tastes in your family and quests. I always seem to end up with three batches of ribs, the spicy zip things up batch, the sweet and savory mellow batch, and the plain old don't mess with perfection just leave my ribs dry batch.
